Badampuri

Prepartion Time: 2 Hours makes 40 pieces

Ingreditents
  • 3 cups Maida
  • 3 tsp of ghee
  • 3 tbsp Rice Flour
  • 3 tbsp Chiroti Rava
Sugar syrup
  • 4 cup of sugar disolved
  • 4 tsp lemon juice
Instructions:
  • Before adding water, add ghee and mix to flour mixture so that it kinds of comes together when you hold the mixture for few seconds.
  • Add water and mix it to a dough.
  • Rest the dough for atleast couple of hours.
  • Mix Riceflour and ghee together and keep the mixture ready.
  • Make like 4 chapatis and stack them together with riceflour and ghee mixture in the middle.
  • Roll it up and then cut it parallely into thin slices.
  • Flatten a bit and then deep fry in oil.
  • Dip fried puris into sugar syrup and top it with pistachios for decoration.
Tips:
  • Fry puris and keep it for few days and add it to sugar syrup 24 hours prior to serving.
  • Add lemon juice to sugar syrup to end so that sugar doesn’t crystalize.
