Badampuri
Prepartion Time: 2 Hours makes 40 pieces
Ingreditents
- 3 cups Maida
- 3 tsp of ghee
- 3 tbsp Rice Flour
- 3 tbsp Chiroti Rava
Sugar syrup
- 4 cup of sugar disolved
- 4 tsp lemon juice
Instructions:
- Before adding water, add ghee and mix to flour mixture so that it kinds of comes together when you hold the mixture for few seconds.
- Add water and mix it to a dough.
- Rest the dough for atleast couple of hours.
- Mix Riceflour and ghee together and keep the mixture ready.
- Make like 4 chapatis and stack them together with riceflour and ghee mixture in the middle.
- Roll it up and then cut it parallely into thin slices.
- Flatten a bit and then deep fry in oil.
- Dip fried puris into sugar syrup and top it with pistachios for decoration.
Tips:
- Fry puris and keep it for few days and add it to sugar syrup 24 hours prior to serving.
- Add lemon juice to sugar syrup to end so that sugar doesn’t crystalize.
