Veg Pullav

Prepartion Time: 45 minutes Serves 4

Ingredients
  • 2 Cup Basmati rice
  • 1 big Onion
  • 1 Tomato
  • 1/4 cup chopped Bell Pepper
  • 1/4 cup chooped carrot
  • 1/4 cup chopped squash
  • 1/4 cup chopped Beans
  • 1/4 cup Peas
  • 1/4 cup chopped coyote squash(Seeme badane)
  • 1/2 cup chopped Cilantro
  • 1/4 cup chopped mint
  • 3-4 small Thal green chillies
  • 2 inch ginger piece
  • 2-3 leaf Garlic (Optional)
  • 2 cups of Coconut Milk
  • 1/4 stick of Butter
  • 2 tbsp of Oil or Ghee
  • 2-3 tsp Salt(or to taste)
  • 1 tsp Turmeric(optional)
  • 1 tsp Fennel seeds(Optional)
Spices
  • 1-2 Bay Leaf
  • 4-5 Cloves
  • 2 inch piece Cinnamon
  • 1 Cardamon
  • 1 small piece Star Anise
Instructions:
  • Grind Cilantro, Mint, Green chillies, Ginger, Gartlic, 1 tbsp chopped Onion into a paste and keep it aside.
  • In a large pan add 2 tbsp of oil, and add all the spices( Bay leaf, Cinnamon, Cardamon and Star Anise)and let it fry in low heat for couple of minites.
  • Add ground paste from step 1 and fry for 2 minutes.
  • Add chopped Onions, Tomato, Peas, Bell Pepper and saute it for 2 -3 mins
  • Add remaining vegetables, Carrot, Beans, Coyote squash and add salt and let it fry for some time.
  • Add Rice and butter and mix it a bit so that rice gets coated with butter.
  • Add 2 cups of Coconut milk and 2 cup water and bring to a boil.
  • Lower the heat and bring it to a simmer. Close the lid and let it cook for 20 min in low flame.
  • Pullav is ready for you to enjoy!!
Tips:
  • I used coyote squash in my recipe. You can substitute with 1/2 potato if you prefer potato instead of squash.
  • Coconut milk is optional. Basmati rice to liquid ratio is 1:2. So, if you prefer to not use coconut milk you can add 4 cups of water.
  • Some of you may not like Garlic or Fennel seeds. You can omit it if you choose to.
