Grind Cilantro, Mint, Green chillies, Ginger, Gartlic, 1 tbsp chopped Onion into a paste and keep it aside.
In a large pan add 2 tbsp of oil, and add all the spices( Bay leaf, Cinnamon, Cardamon and Star Anise)and let it fry in low heat for couple of minites.
Add ground paste from step 1 and fry for 2 minutes.
Add chopped Onions, Tomato, Peas, Bell Pepper and saute it for 2 -3 mins
Add remaining vegetables, Carrot, Beans, Coyote squash and add salt and let it fry for some time.
Add Rice and butter and mix it a bit so that rice gets coated with butter.
Add 2 cups of Coconut milk and 2 cup water and bring to a boil.
Lower the heat and bring it to a simmer. Close the lid and let it cook for 20 min in low flame.

Tips:
I used coyote squash in my recipe. You can substitute with 1/2 potato if you prefer potato instead of squash.
Coconut milk is optional. Basmati rice to liquid ratio is 1:2. So, if you prefer to not use coconut milk you can add 4 cups of water.
Some of you may not like Garlic or Fennel seeds. You can omit it if you choose to.
